An ideal weekend for me includes having a few hours to prepare food that'll be ready to go for the work week ahead. With Miss T, who has a tendency to be attached to me, getting food on the table when we get home can be a challenge. I've already discovered that if I don't at least have an idea of what I'm going to cook, we'll probably end up eating take outs. So I started to work out a rough menu for the week when I go grocery shopping on weekend. It evolved to now where I try to assemble a couple dishes that I could just heat up or have everything prepped so I could just throw everything together after work.
Here's the rough menu and what I've done today to prepare for the:
- vegetarian lasagna (assembled and ready to bake)
- meatballs in tomato sauce (meatballs were cooked today, half went in the freezer; will cook the sauce in slow cooker; pasta cooked and toss with a little oil before cool)
- pork stew (meat took down from freezer to defrost; carrots, onions & celery washed and cut into chunks; potato will have to be cut at the last moment)
- chicken thighs (took down from freezer; marinate the night before to be bake)
- unagi fried rice (rice cooked; unagi defrosted; green onions chopped)
- bunch of spinach cleaned
- banana bread (baked and ready for breakfast with a little nut butter or Nutella)
- chocolate pudding (dessert of the week, Chris made this one though)
Haven't work out all the details yet, like what to eat with the chicken thighs and pork stew, but at least now I have something to go on and should be able to avoid having to eat take outs.
