Salad for Breakfast

Breakfast Salad

A few years ago, I read one of those weight loss plan in a magazine and it recommended eating a big salad early in the morning to get the the day started in a healthy way. The idea sounded weird and interesting at the same time to me. I did try it eventually (the salad for breakfast idea, not so much the weight loss plan.) I found that I really did enjoy starting the day with a healthy salad. Now, I'm one of those people that rather eat something savory than sweet to start the day. I already get the sugar in my coffee in the morning, any more and I will start to feel sick for the rest if the afternoon. The only thing that really holds me back from  eating it on a regular basis is that it does take a while to put a salad together and eat it on a weekday. On weekend when I do have more time to cook, I tend to forget about throwing together a salad. I put this salad together one Saturday after being reminded from a pin on Pinterest. It was easy to throw together, since I only need to poach a couple of eggs. Butter lettuce was lightly dressed with lemon juice and olive oil. Topped with a few slices of prosciutto and parmesan.
